Grilled Vegetable Skewers

Ingredients
  

  • Fresh Vegetables choose what you like: bell peppers, onion, mushrooms, zucchini, eggplant, yellow squash, asparagus, cherry tomatoes, etc
  • Extra virgin olive oil
  • Seasonings like unrefined salt pepper, oregano, basil...whatever you like!

Instructions
 

  • Cut your chosen veggies into large cubes
  • Skewer the vegetables.
  • Soak the skewers in water for 10 minutes.
  • Remove from water and allow excess water to drip from the skewers.
  • brush on olive oil
  • Sprinkle on your choice of seasoning. I like using an Italian seasoning mix.
  • Grill for 10-15 minutes
