Ingredients
Fresh Vegetables
choose what you like: bell peppers, onion, mushrooms, zucchini, eggplant, yellow squash, asparagus, cherry tomatoes, etc
Extra virgin olive oil
Seasonings like unrefined salt
pepper, oregano, basil...whatever you like!
Instructions
Cut your chosen veggies into large cubes
Skewer the vegetables.
Soak the skewers in water for 10 minutes.
Remove from water and allow excess water to drip from the skewers.
brush on olive oil
Sprinkle on your choice of seasoning. I like using an Italian seasoning mix.
Grill for 10-15 minutes
