I will be the first to say that I’m not a big coffee drinker. But I do enjoy an occasional cold coffee drink. Of course, I want to avoid the expensive drinks at the big coffee chains because, well frankly, I want to know exactly what is in my food and beverages. And I do know that there are some ingredients in those popular coffee drinks that are less than good for me. So I decided to start making my own and really wanted to start with a simple vanilla iced coffee. It is so simple to make a batch of cold brew coffee which is perfect for these chilly drinks. So this vanilla iced coffee was my first venture to making my own special coffee drinks. I actually put together a few versions of this until it was just right, but really like the taste! I use a good decaffeinated organic coffee bean, and that, combined with the lower acid cold-brewed coffee make this much easier on my tummy which is nice.
Of course, I also like knowing exactly what is going into this drink. When you buy beverages at the coffee shop, there is always more of a concern about what ingredients may be in their products.
For those with dietary concerns, this beverage is gluten and grain-free.
Vanilla Iced Coffee (Recipes for One)
Ingredients
- 1/2 cup cold brewed coffee
- 1 1/2 cups whole milk
- 1/2 tsp vanilla
- 1 1/2 tbsp turbinado sugar Sucanat or coconut sugar
- 4-5 ice cubes
Instructions
- Add coffee, milk, vanilla and sugar in a large cup.
- Mix thoroughly until sugar has dissolved.
- Add ice cubes
- Enjoy!
