The easy way to cook butternut squash!
This fall and winter I have really gotten into using winter squash like butternut squash in different recipes. So I am always looking for new ways to incorporate it into new meals. But I really wanted to find a simple way to cook the squash for soups and mashed squash recipes. And since I like the easy way of doing things, I wanted to try using the slow cooker!
Baking it in the oven is fine, but I also wanted a way to cook it so that I could leave the house and run some errands. Here’s where the slow cooker became my rockstar appliance!
Slow Cooker Butternut Squash
Ingredients
- 1 butternut squash
- 2-3 tbsp water
Instructions
- Cut the squash in half and scoop out the seeds.
- Cut each half in half and place into slow cooker
- Add water to slow cooker
- Cook on low for 3 hours
- Allow squash to cool slightly and scoop out the pulp for use is stews, soups and mashes.
