I absolutely adore beef stroganoff. And I am ashamed to admit this, but before my real food transformation, I regularly ate the boxed “helper” version of ground beef stroganoff….regularly! Unfortunately, the packaged version contains some ingredients that aren’t really whole food. So once I started eating whole real foods, I just had to create a recipe that would fit the bill and satisfy my stroganoff cravings. But without the dose of man-made ingredients! And it needed to be downright tasty too!
This version is really simple and pretty darn quick to make as well! Mix it all up on your stove and don’t worry about turning the oven on! Perfect for a weeknight meal.
This dish can be made gluten-free by serving over brown rice pasta or brown rice and can be made grain-free by serving it over zucchini pasta or potatoes.
