This is another classic recipe that reminds me of my Mom. She absolutely loved eating bean with ham soup and as a result, I was raised eating this soup. It is complete comfort food to me. My Mom loved to make it throughout the fall and winter months because it not only was great for warming me up when I was cold, but it was hearty enough to stay with me for a while. The recipe is made even more simple by cooking in the slow cooker (which is probably my favorite small appliance).
This bean with ham soup is great paired with cornbread or some fresh gluten-free biscuits! If you don’t want a bread type of side, try it with a nice veggie-rich salad. I almost always have applesauce with it…just a childhood thing!
Bean with ham soup is naturally gluten-free and is grain-free as well. It is not Paleo-friendly. I love that this simple and classic soup feeds two. It makes great leftovers!
Bean with Ham Soup (Recipes for Two)
Ingredients
- 4 cups vegetable broth
- 2/3 cup onion chopped
- 2/3 cup carrot chopped
- 1/2 cup celery chopped
- 4 cloves garlic minced
- 1 can Great Northern Beans drained and rinsed
- 1 1/3 cup ham chopped
- 1/2 tsp ground mustard
- 1/4 tsp black pepper
Instructions
- Place all ingredients into slow cooker.
- Cook on low for 4 hours or high for 2.
